coleslaw - the LAM shares a recipe!

My husband is a damn fine cook.

He just does not cook as much as he used to because, well, I like cooking a lot more.

And I hog the kitchen.

I love taking pictures of the LAM cooking. But the last time he cooked (ok, grilled - it is a man-thing), it rained. And I did not fancy getting wet. So the pictures were not very good.


And I could not write a blog post about that really delicious rack of ribs he made.

We threw a BBQ party over the weekend and the LAM volunteered to make the coleslaw. Which was a great thing because he makes a damn fine coleslaw.

And he gets to play with the kitchen toys he bought me. Which I have yet to use. :P

Of course I was going to document this. :)


The first thing, of course, was to figure out how to put the machine together. I have no idea. But the man is a genius. And soon he had it up and running.


Then he cut up the cabbage and carrots.



And blitzed.


Till he got fine bits of vegetables.


The celery went in whole.


And joined the carrots and cabbage.

Not forgetting a finely diced small onion as well. (He was too fast so I could not get a picture.)

And we ended up with a pot of vegetables.


To make the dressing, everything was measured out into a bowl.


And whisked.


Then the little boy came to find what what his Daddy and Mommy were up to.

And wanted to get involved too.


Of course a couple of rounds of stirring was never enough.


But hey, it was fun.

The dressing was mixed with the vegetables.

Just keep stirring.


Then transfer everything into a container and let the flavours mix and mellow overnight in the fridge.


RECIPE
Coleslaw (Serves 10-12)
Loosely adapted from www.topsecretrecipes.com

Ingredients:
2 1/2 cups mayonnaise
1/3 cup caster sugar - We used 1 tsp sugar
1/4 cup milk - We omitted this
1/4 cup buttermilk
2 1/2 tbs lemon juice
1 tbs Dijion mustard
1 1/2 tbs white vinegar - We used rice vinegar
1 tsp salt
1/2 tsp black pepper
1 head of cabbage
2 small carrots
2 sticks celery - We added this because we could not find celery salt
1 small onion

Method:
1. Chop all vegetables into very fine pieces.
2. Combine the remaining ingredients in a bowl. Whisk to mix.
3. Add to vegetables and mix well. Check seasonings. Chill minimum 2 hours before serving.

  3. How cool is that Diana, I wish I like being a kitchen hog, I'm afraid the husband and I both detest cooking - sad that :( Maybe as the kids get older and less work I will find pleasure in it again :)

  4. So going to try this recipe out next time we have a BBQ dinner - I love Coleslaw but I don't prefer the dressings that you buy at the stores :)

    1. Thanks Lisa!! I love the fact we could add as much/little as we like - especially the mayonnaise as we don't like too much mayo in anything!
