the impossibly easy bisquick 7-up biscuits

If you are a regular reader of my blog, you would know that I tend to post recipes that are very simple, or I'd try my best to break the more complicated recipes down into more manageable steps so most people, even beginner cooks can produce yummy dishes in their kitchens.

In fact, recently, a fellow Mom blogger called me the Queen of Quickies because of the number of quick recipes I had posted, much to my amusement.

Today, I am sharing a recipe on how to make biscuits. American-style biscuits, that is. And these biscuits are made with, yes, you read correctly, 7-up!

I started making these biscuits and my 4-year-old son, Aden, came into the kitchen and asked to "help Mommy".

Since I am all for my kids getting hands-on in the kitchen, I readily agreed to let him help.

If you have been to Popeyes or Texas Fried Chicken, chances are you would have tasted their biscuits. In fact, I really love these biscuits, but I would normally not make them in my really hot kitchen. I tend to avoid any recipe that involves chunks of unmelted butter because butter melts too quickly in my kitchen.

I found this recipe while looking around to see what else, besides the impossibly easy muffins I could do with my Bisquick mix.

This recipe is so so so simple (and requires no chunks of unmelted butter), but produces such light and tender biscuits. You really have to give them a try!

To make the biscuits, I started by getting Aden to mix the sour cream with the Bisquick mix. If you do not have Bisquick mix, you can find the recipe for a home-made (but just as good) version here.




Then I added 7-up to the mixture. I guess Sprite would work too? Nevertheless, I had 7-up so I used that. And mixed until everything came together.



The dough would be very soft. All is okay.

I sprinkled more Bisquick onto my work top, and Aden used his hands to gently pat the dough until it was about 2.5 cm (1 inch) thick.


He used a biscuit cutter (you can use whatever round thing you have - glass, bottle, etc) to cut out the biscuits.


I melted some butter and poured it into my baking pan. Then I placed the biscuits in the butter.


And baked them.

About 10 minutes later, I was biting into freshly baked, buttery biscuits.


They are soft, and light and melt-in-your-mouth. Very much like scones, which I love!

I'm sorry. I really need to go eat another biscuit.


And brag about the day my 4-year-old made us biscuits.

RECIPE
The Impossibly Easy Bisquick 7-Up Biscuits (Makes 10)
Adapted from Just a Pinch

Note: I used a 9x13 baking pan.

Ingredients:
2 cups Bisquick
1/2 cup sour cream
1/2 cup 7-up
1/4 cup (57.6g) melted butter

Method:
1. Add sour cream into Bisquick and mix together
2. Add 7 Up. The dough will be very soft.
3. Sprinkle additional Bisquick onto the counter and gently pat the dough out to desired thickness (about 2.5 cm or 1 inch)
4. Use the bottom of a glass or a biscuit cutter to cut out biscuits.
5. Place melted butter into a baking pan. Place biscuits on top of butter.
6. Bake in a 220C oven until golden brown, about 10 minutes.
