chocolate nutella cookies

I am not a fan of cookies. My family, though, is another story. With the exception of Jadelyn, who is still not allowed to eat cookies, the rest are definitely cookie monsters. The LAM likes his cookies crunchy. Aden loves his cakey. So I often make cookies for them, but rarely do I eat any myself.

When I saw the recipe for these cookies, I thought I would have a go at making them since I always have Nutella in the pantry.


While I generally do not like cookies, and I really dislike nuts (ALL nuts), I was surprised at how much I liked these!!

The first time I made them, I was ready to throw the whole lot away in total disgust. They were extremely crumbly, even worse than a moist cake. Before they went into the bin, Aden saw them and insisted he wanted to eat them. So I gave him one and after tasting it, he took the box away from me, exclaiming, "It's MINE!!!"

Boy, I was rather taken aback. So I tried one. The flavour was really good!!

Hence, I decided to have another go at making them and made a few changes to the recipe so the cookies did not end up being so crumbly.

I started by creaming the butter and Nutella.


Once the mixture had become creamy, I added the sugars and beat until the mixture was light and fluffy.




Next, I added the egg, water and vanilla extract.


And beat to thoroughly incorporate.


Then I added the dry ingredients and mixed until the batter started to come together.



Once the dough was ready, I pinched off bits of dough and rolled them to make little balls of (roughly) 2.5cm diameter and placed them on lined baking trays.


I used my finger to flatten the cookies a little and using a fork, I pressed gently to form a pattern before baking them.



This is optional, of course. I have also made these cookies using an ice-cream scoop to dish them out onto the baking trays, and they turned out to be just as delicious.


I baked my cookies for 10 minutes, but you can adjust the time (add or take away 2 minutes) for softer fudgy cookies or crispy ones.


Just be sure to keep them hidden from your little ones!

RECIPE
Chocolate Nutella Cookies (Makes 24)

Ingredients:
1 3/4 cup plain flour
1/2 cup cocoa powder
1 tsp bicarbonate of soda
1/2 tsp salt
113g butter, at room temperature
50g Nutella
1/3 cup caster sugar
1/3 cup brown sugar
1 large egg (60g)
2 tbs water, room temperature
1 tsp vanilla extract

Method:
1. Preheat oven to 170C. Line baking trays with baking paper.
2. Beat butter and Nutella until creamy. Add both sugars and beat until light and fluffy.
3. Add egg, water and vanilla extract. Beat to thoroughly incorporate.
4. Add dry (sifted) ingredients. Mix until dough starts to come together and flour is nearly incorporated. Fold the flour a few times to incorporate the last of the flour.
5. Pinch bits of dough and roll to form balls with diameter of about 2.5cm. Place the balls on the baking sheets.
6. Bake 8 minutes for softer fudgy cookies up to 12 minutes for crispy cookies.

NOTE: Store cookies (preferably) in a single layer. If you have to stack them, separate the layers with baking sheets.
